The example in the article isn't very good.

I agree the article isn't very good. I'm not sure it's accurate either. Which was the original meaning, was it 'the most substantial dish', was it that it 'resisted' the usual/orthodox way of doing things? Or was it, as this: http://www.wisegeek.com/what-is-a-piece-de-resistance.htm (much-better) article suggests, the sense that it was something you had RESISTED revealing until a special moment when you really wanted to impress?

Interestingly, there doesn't seem to be an article on the French Wikipedia, although presumably they all know what it means(!)
